Foothill House Sweet Dreams

Here is the recipe as promised. You won't regret making these! They're delicious with a hot cup of chai latte :)

Foothill House Sweet Dreams Cookies
from the Foothill House B&B

1 c. butter, room temp.
1 1/2 c. brown sugar
1 egg, room temp.
1 tsp. vanilla extract
2 c. flour
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. kosher salt
12 oz. package chocolate chips
1 c. powdered/confectioners sugar

  • Cream butter using an electric mixer. Beat in brown sugar, then the egg, and finally the vanilla extract.
  • In a separate bowl, combine the flour, baking soda, cinnamon, ginger and salt. Gradually stir the dry ingredients into the butter mixture. Fold in chocolate chips and pecans (dough will be very stiff). Refrigerate until firm (about 1 hour).
  • Preheat oven to 375 degrees F and lightly grease cookie sheets.
  • Place all of the powdered sugar in a small bowl. Remove dough from fridge and roll into 1" balls. Roll each ball in the powdered sugar, place on cookie sheet, and bake for 8-10 minutes. Let cool on sheet for 5 min. before transferring.

This sounds yummy! How many pecans should we use and what is Kosher salt?

I usually buy a regular size bag of pecan halves at the grocery store and use about half to 2/3 of it (I LOVE pecans though). Kosher salt is a course salt and I like the flavor of it much better than table salt, so I use it for almost all my cooking & baking (it's especially good for savories like meat rubs, guacamole, etc). You can find it in most grocery stores in the baking isle. It usually comes in a box that looks exactly like this:

I had such a craving for these after talking about them so much that I decided to make some as a housewarming gift for my friends today (and of course snag 3 or 4 for myself before delivery...hehe!)

Thanks! - I'm going to try this recipe next weekend. I love pecans, ginger and of course Chocolate! I'll let you know how I get on. I know the salt you mean now.

And these will be making an appearance at our quilting retreat....? Right....? :)

yes, as well as some chai latte :)

I just made these earlier - they have a really different taste and are so yummy! It's a job to not keep eating them. There are so many different flavours as you munch! Thanks again for sharing :-)

I made these and they are TO DIE FOR! I added golden raisins - YUM!
